ひるぺこThis time it is Hana of Hyakurugakumon. Kinuhikari produced in Gosho City Gosho City peony yeast and peony flower yeast produced in Gosho City, This is the first sake brewed by Mr. Taniguchi, who took over the business of Katsuragi Shuzo. The bottle was opened in about an hour while slowly enjoying the doburoku dance. The first aroma was a soft floral scent mixed with pineapple. It is a vigorous and dry sake. The freshness and mild acidity The freshness and mild acidity combined with the rice's crumbly texture make it a dry and delicious sake. It is dry and delicious! It is not possible to open the bottle without chilling it thoroughly, but when it comes back to room temperature, a slight sweetness takes over and the flavor becomes more to my liking. It is a new type of floral yeast, We are very happy that it turned out okay. This time it was only a small amount of doburoku, but they would like to sell it as sake in the future. I am looking forward to selling it as sake 😊.

It was so refreshing that it disappeared in my mouth. I can't stop eating more. We had it with grilled swordfish and sauteed oysters. It was delicious.

ひるぺこTonight we have another bottle of doburoku from Hyakurugakumon. This sake is from Gosho City, Nara Prefecture. I stopped by a liquor store on my way home from the Bodaihashi Festival the other day and was told that if I bought a bottle of Hyakurakumon's Bodaihashi, I could go on a tour of the brewery! I was curious about the taste of Hyakurakumon and the story of its business succession, so I was grateful for the opportunity. Mr. Kubo, the brewery's toji, was very friendly and talked to us about many things, and Mr. Taniguchi, who became a co-owner of the brewery after the succession of the business, seemed to blend in naturally with the brewery. We had Bodai-Hashiroshi doburoku sake. I told them that I wanted to drink it but was afraid of it exploding at home, but they told me that they had a 500ml bottle in a 4-pack, so I could have it. Sure enough, I was able to open the bottle in a couple of sips. It is a doburoku with lots of rice grains. Not much aroma, The sizzling mouthfeel of this doburoku has a refreshing, restrained sweet and sour taste with just the right amount of rice flavor. It has a refreshing aftertaste and is easy to drink, despite its appearance of sludginess. It has a light aftertaste and is easy to drink, despite its sludgy appearance! I thought it would have more of a Bodhidharma feel, so I was disappointed, but it might be the best Doburoku I've ever tasted. It was a great experience to visit Katsuragi Brewery 💕!
