It is a light sake with a deep, full-bodied, sharp, and slightly dry taste. It has a round and slightly sweet mouthfeel at first taste, a light matured feeling, slight apricot, cocoa, and rich umami...all intertwined with a fine acidity that lingers on the tongue.
I felt it was a refined taste for a junmai sake.

Yoshikawa Sake Shop is cozy, but I like the polite service of the old man and young master ☺️ surprisingly hole-in-the-wall existence 🤭Every time I visit, they ask, "Did you drink Miyazaki's sake?" They are very attentive 🥹.
It is soft on the palate, with subtle but soft dried fruit flavors of raisins, coffee, and cocoa. It has a slightly spicy, clean finish with a calm and elegant sweet flavor.

I forgot to record the taste, so I don't remember the detailed nuances.
Perhaps because of the 17% alcohol content, I felt a strong sense of alcohol even though it was pure rice.

The color is clear.
No aroma.
The taste is mainly umami and bitterness with a hint of sweetness.
The mouthfeel is straight ⬆️, with no hooks.
The ginjo aroma is faintly fragrant.
No standout features like most modern sakes, but that is why I felt the sake was carefully crafted 🍶😊.
This is the one after all.
It has a gentle taste that you can drink every day. It is delicious both at room temperature and at hiya (hottest temperature).

The first sip has a mild aroma and is quite dry.
But it gradually mellows out with the second and third cups.
On the second day, when it was warmed to lukewarm, it became softer and sweeter.
This is the joy of nama-sake.
After that, I alternated between cold and lukewarm sake.
