Pale greenish yellow with transparency.
First impression of the scent is elegant rice, I like this kind of scent these days.
Banana, muscat, white bean dumplings, beautifully pinched rice bales, and lime as minerality.
The first impression on the palate is gentle but firm.
Elegant sweetness, smooth acidity with fine bubbles, and a hint of bitterness at the end.
The balance is smooth with a gentle mellowness, and there is a good aftertaste.
I have the impression that this wine can be served with not only light appetizers, but also with main dishes because of its robust rice flavor.
Today, I drank it with shrimp and chili, and it has a delicious rice flavor that will not be defeated.
I would like to drink this sake again!

Next is Chiyonomitsu.
This is another favorite brewery of mine. I wanted to take my time to compare the different sakes, but I wanted to make a round before the heavy rain came.
Personally, I would have liked to have had more time to savor Echino Shiratori, Yukinakubai, and Chiyonomitsu 😭.

To better understand the taste of Shikai-O, I drank this bottle of Chiyomitsu Shin as a comparison.
I bought a 300 ml bottle at Yoshiike in Ueno Okachimachi.
This Chiyonomitsu brewery is one of the best breweries in Niigata Prefecture, and as one would expect from them, this special honjozo is a nice, neat sake with a clean mouthfeel and a delicious rice flavor.
It is also good for lukewarm heating, making it suitable for evening drinking.

I bought some salted squid and scallops with cheese at Yoshiike in Okachimachi, Ueno.
Yoshi-ike in Okachimachi is a hidden antenna store of Niigata Prefecture and a food wonderland where you can find a wide variety of snacks.
