The spiciness on the tongue is quickly washed away by the umami and acidity of the rice. Sake that can be drunk slowly and savorably.
It is also good warmed up.
I saw this one at a store I sometimes visit and have been curious about it for a long time.
I tried Kanenaka, a sake made by Nakajimaya in Shunan City, Yamaguchi Prefecture.
The label is very cool.
The manager recommended this sake, and it won a prize at a competition in Paris, so I opened the bottle with high expectations.
The first saké was cold and the first saké was, "Hmmm? It has a strong unique flavor... It's a bit peculiar because it's a sake brewed from a traditional sake brewery... It's not a good match for me... I think it would be better to warm it up 🤔.
I opened it for 2 days and drank it....
It has some kind of sweetness, and it's indescribably rich and delicious 😳.
This is what I mean when I say that the taste opens up.

I like to drink yellow sake warmed up (my theory).
It was a well-balanced sake, with a slightly dry taste, and no one aroma or sweetness was dominant.
