I finally opened a bottle of sake that I purchased at a distributor near the brewery in the summer. It had a fruity aroma with a hint of muscat, a light sweetness, and an elegant umami flavor that was almost overwhelming, with a subtle complexity that was refreshing and clean. The Funatobune has a slightly fruity aroma. When you drink it, it is light sourness from light chili. And lightly spicy. It is easy to drink and can be easily matched with any meal.
The rice is Watabune from Ibaraki Prefecture. It is polished to 55% and the alcohol is finished at 15 degrees. Perhaps because it is light and dry, the alcohol is not felt as much as 15 degrees, and it is not overly sweet.
It seems to go better with dishes with strong flavors. It refreshes the palate. This is good! It is.
