Bouken-san told me about it before, and I've become a fan of Watashibune's new sake 😚. But it's made with 100% short-stemmed Watashibune. I think this brand is as good as my favorite Genmai which I opened just before. The aroma is like a grape🍇, and in the mouth you can feel a very thin gas and a gentle sweetness. The aroma and taste are well integrated, and the transparent flavor fades out with a slight bitterness, which is brilliant 😆. Today I paired it with a yose-nabe with agaric broth, and the complex broth of the seafood and the flavor of this sake matched so strangely that I could really linger and eat and drink forever... It's still Monday, so I had to call it quits 😅.

New Year vacations end today 🥺. I don't want to go back. Well, there will be a 3-day weekend soon. It's been a super long time since I've been to Watarabune. Same brewery, we drank Taiheikai at last year's offline meeting 🤔. It's gassy and fresh. It has an apple-like sweetness and a bit dry and mineral. The minerality is as impressive as the fire-aged Watashu I drank in the past. Not only the minerality but also the acidity is quite impressive.

At Shizukiya Back in Ibaraki, first bottle of local sake! This is delicious 😋. Although Watarabune may be a little too sweet It goes well with fresh raw sake I think it has a nice pear🍐 like flavor Local sake, delicious this time of year Let's visit Soja Shrine next week!
