Notoji Honjozo Honjozo Honjikomi
The rank was unknown, so I ordered it cold. We looked at the bottle and found it to be a honjozo, as expected. The aroma was subdued and there was a slight alcohol taste in the aftertaste, but it was highly compatible with local snacks.

Aroma: Rice aroma like Japanese sake.
It has a clear, dry taste with a little rice-like sweetness in the aftertaste.
It disappears quickly.
If you are not used to drinking sake, it may be a little difficult to drink. There is no hint of fruity taste, so it can be used as a midday drink, but it is better to drink it with something to eat.
When I visited Unazuki Onsen and Kanazawa the other day, I tasted it and it was good, so I bought it. It's a taste I've never experienced before, with a refreshing mouthfeel and a long lingering aftertaste on the tongue. I happened to meet a sake brewer at a liquor store in Kanazawa station, and he recommended it to me, but this is a hit. Today, I drank it with sashimi. It is a wonderful taste.

Notoji Special Junmai Sake
The brewery is located in Tsubata-cho, at the base of the Noto Peninsula, and is said to be the only brewery in Japan that has been engaged in integrated production from rice cultivation to sake making since its establishment.

Tsurugi Yamahai Junmai Tsurugi Yamahai Junmai with just one cup of cold sake
The brewery is located in Tsurugi, Hakusan City.
First of all, the aroma is not fruity, but rather the flavor and acidity of the company's own long-lived rice.
In the mouth, sweetness and umami, with a little bitterness and sourness coming a little later ❗️.
Somewhat reminiscent of vanilla, it has a richness to it❗️.
Sake level is +5, which is not an extreme value, but it's firm, spicy and sharp ❗️.
In general, I would say it has a deep taste.

We bought it at the shop of the station on the way back from Kanazawa.
I opened the bottle on the Shinkansen. The first sip. It tastes like a cup sake. The color is yellowish, and it is a little sweet and sticky. The aftertaste ends up being spicy. There is no brewing alcohol in it, but it is very alcoholic.
Chosei rice is grown in the company's own rice paddies. There is a type of rice called "Nagaikimai" in Chiba, but maybe it's different from that?
When you're on the Shinkansen, this kind of sake seems to be a good choice. On the other hand, it is nonsense to drink Shinsei in Shinkansen.
