September 15, Part 2 After enjoying Kanazawa Oden🍢, we will buy some souvenirs and leave Kanazawa... Now I want to come back in the cold 🥶 season of winter 😊. Take the limited express Shirasagi No. 10 to Maibara❗️ I held out for only one cup of oden, so naturally I had a cup of sake 😁. Here it is❗️ Notoji Special Junmai Sake The brewery is located in Tsubata-cho, at the base of the Noto Peninsula, and is said to be the only brewery in Japan that has been engaged in integrated production from rice cultivation to sake making since its establishment. Isn't that the originator and pioneer of Domaine⁉️? That's amazing ❗️. Tsurugi Yamahai Junmai Tsurugi Yamahai Junmai with just one cup of cold sake The brewery is located in Tsurugi, Hakusan City. First of all, the aroma is not fruity, but rather the flavor and acidity of the company's own long-lived rice. In the mouth, sweetness and umami, with a little bitterness and sourness coming a little later ❗️. Somewhat reminiscent of vanilla, it has a richness to it❗️. Sake level is +5, which is not an extreme value, but it's firm, spicy and sharp ❗️. In general, I would say it has a deep taste. Wow, Ishikawa sake, so deep 👍. I'm tempted to make another Hokuriku pilgrimage soon 😁.
