National Sake Fair 2025 in Osaka_82 Ishikawa Prefecture Booth (2) Sakurada Sake Brewery in Suzu City. The person who answered us was the head brewer of Dakei, who cheerfully and jokingly told us that the brewery had been completely destroyed in the Noto earthquake and that he was no longer the head brewer since he had no brewery. ◉Taikei Junmai Sake Not "daikei," but taikei. This sake was made at Kurumata Brewery in Tengu Mai. The plan is to build the brewery in another year and a half or so and hopefully rebuild it. Kurumata Brewery seems to have taken on the whole project. I remember it was good, but I don't remember what it tasted like because I was so engrossed in the conversation that I forgot to take notes... I will buy some and drink it when I find it, as it will help with the reconstruction efforts. I'll buy it and drink it when I find it. The only place that carries it is in Osaka. I went to the Wakayama booth because I really wanted to drink it, even though it was almost over.

(I would like to express my gratitude to all of you for your support and encouragement. It's already been a month since I arrived in Shizuoka Prefecture 😀 I opened a bottle of Sakurada Shuzo + Kurumada Shuzo's Daikei, which I brought with me when I arrived 😊. The aroma is mild 😊The flavor of the rice 🌾and the beautiful sweetness 😚The taste is clean and refreshing with a crisp acidity 😀😫😫I felt that it is a completely different sake from the previous Junmai from Okei 🤔. I'll keep drinking and supporting until the solid sweetness of Da Kei comes back 🥳. The fourth one was white hor ginger from Ofukuro-tei on route 1 😋 It was the most cost-effective 600 yen lunch 🤩.

When I went to the "Noto local sake market" in Nihonbashi, I saw that they were selling Da Kei, which I had enjoyed when I traveled there the year before the earthquake, so I bought it out of nostalgia and as a show of support. I was told that the sake rice was miraculously rescued and brewed together at Tengumai's facility. The taste was more classic than the one I had previously tasted, but it was also refreshing and well-balanced as a food sake. I think it is really hard to rebuild a sake brewery that has been completely destroyed, but I would like to support them in any way I can 🍶🙂.

Dakei x Kurumata Shuzo: Supporting the Recovery of Sake Breweries in Noto Gorgeously pleasant grain-based ginjo aroma. The first taste is a personal umami in the main taste buds. It has a moderate umami and sweetness that comes later with a little bit of strong acidity. The acidity and other flavors extend well from the mid-part of the bottle, and it seems to be more suited to fish than to meat. I think buri daikon and dried fish are accurate, and it is a regional flavor.

Okamoto's sake tasting event (*ω`*) I had a good time drinking Okamoto's sake at a different event, but it has been a long time since I have had it. It has a round mouthfeel with a hint of acidity. It is a junmai sake that can also be warmed up. It is a very comfortable yet robust sake! It was a very small event, about the size of a parking lot in front of a bank, but it was worthwhile because there were many sakes I didn't know about!

I went to "Noto no Jizake Ichiba", an event to support sake breweries in Noto. I could not forget the delicious taste of Dakei (4th photo), which I encountered during my Kanazawa sake trip in April 2022, In February 2025, we met again at Tengu Mai's help. Junmai Sake Daikei🍶. Sake rice rescued from a brewery destroyed by the earthquake was brought to Kurumata Brewery in Hakusan City, and brewed together to make this junmai-shu. We were also able to meet the brewery's father and son, Mr. and Mrs. Sakurada. Their bright smiles made my eyes roll back in my head. 😢 The Junmai sake, which was entrusted with prayers and hopes, tasted hearty and gentle 🌟.

(ꕤ ॑ す す す す す す す す す)ノ 🍶🍶🍶🍶 Today we opened a bottle of Sakurada Shuzo's Hatsuzakura 😀✨This "Noto Kami-Sen Hatsuzakura" was brewed 3 months after the earthquake, with the cooperation of Kurumata Shuzo, who removed the Honjozo from the collapsed storage facility, where it lay in tanks. After being brought to the Kurumata Brewery, it was filtered and blended. It is said that this is the last honjozo sake from the Sakurada Brewery. The aroma is a little floral and full of rice 🌾 flavor 😊The mouthfeel is mellow and when you put it in your mouth, the firm umami comes first and you can feel a hint of sweetness 😋The acidity is light and refreshing overall😚👍It seems to be lighter than before 🤔. The fourth one is a beaver I bought that I had never seen before 😇It was a delicious beaver to begin with, but the salty flavor was just like kelp 😘It was a good one to have as a snack 🥳.

We opened a bottle of Sakurada Sake Brewery's Daikei, which was totally destroyed by the Noto Peninsula earthquake 😀 It has been about a year since it was made and half a year since the earthquake 🤔It is 100% pure and original sake before the earthquake 😊. The aroma is mild yet fruity🤔The mouthfeel is round, sweet like melon🍈 and rich in flavor🥰It's been about a year since I had it, but it's still my favorite delicious sake😋💕. I can only support them by drinking it, but I hope they will do their best to rebuild their brewery😇.

Special pure rice? Amber body. Caramel aroma and rice sweetness are cut off by being squeezed out with moderate acidity. It is a light and refreshing sake with rice flavor. It is not widely distributed outside of Suzu City. I found a wonderful sake on my trip.

٩٩@🍶🍶🍶🍶 I went to see the cherry blossoms at night at Kenrokuen Garden and Kanazawa Castle 🌃🌸 😀 Last year there were many people there, and this year many people came to see the cherry blossoms again 😆 It looks like it will be almost full-bloom soon, but the cherry blossoms are still beautiful 😊. I wanted to drink sake while watching the cherry blossoms, so I brought a small bottle of Hatsuzakura 😚Sitting on a bench in front of the cherry blossoms, my partner and I toasted 🍶✨The sake was a strong honjozo 😘The snack was crab cakes from Sugiyo in Noto🦀They go great with Hatsuzakura 😚👍 This Hatsuzakura is 100% Sakurada sake which survived the earthquake😇Hanami and Hatsuzakura were a good collaboration🥳✌️

٩٩@🍶🍶🍶🍶 Drink and cheer 📣✊! We were served a reconstruction support sake blended by Sakurada Shuzo and Kurumata Shuzo, both of which were severely damaged by the Noto Peninsula earthquake😋. It's a little more refreshing than the usual Hatsuzakura, but has just the right amount of sweetness and rice flavor 👌It's still a delicious sake✨. Next, we warmed it up to lukewarm using the "Kanmakase" sake warming machine we installed this year 😚♨️ The aroma is milder than cold 🤔The sweetness and umami in the mouth is a bit more muted than cold, but the aroma through the nose is much more delicious 😊. It was a cold day today, so I liked it warmed ✨🥰🥰It is a delicious sake that can be enjoyed cold or warmed 🥳👍.
