When I went to the "Noto local sake market" in Nihonbashi, I saw that they were selling Da Kei, which I had enjoyed when I traveled there the year before the earthquake, so I bought it out of nostalgia and as a show of support.
I was told that the sake rice was miraculously rescued and brewed together at Tengumai's facility. The taste was more classic than the one I had previously tasted, but it was also refreshing and well-balanced as a food sake.
I think it is really hard to rebuild a sake brewery that has been completely destroyed, but I would like to support them in any way I can 🍶🙂.
