We opened a bottle at the office. This is the first time we have had "Shirasagi no Shiro", another name for Himeji Castle. At first I drank it at room temperature, and from the second glass I drank it on the rocks, and I could feel the gentle sweetness of the sake. The taste reminded me of Tengu Mai's Yamahai brewing. I'd like to try it warmed.

The location changed and we went to Hyogo Sake EXPO 2022, a local sake event in Hyogo, at Kobe Hankyu. I tasted a regular product, a draft version. I had tasted the hi-ire version before, so I wondered what the draft version was like. It was easier to drink than the hi-ire version, but not to my taste. I prefer the Shirasagi no Shiro (castle of the egret), which is made with Nojoho.

The only place I can think of that uses Nojoho is Okutanba. The overall impression is gentle and the taste comes slowly. It looks like wood, grass, or herb. It also has a classy atmosphere. The sake here is not my favorite, but when I find it, I buy it for some reason.

Today's Sake is a limited Kimoto Junmai Ginjo from Tanaka Shuzo in Hyogo. This starts with the aroma and flavor of pear with a dry finish. The Kimoto style of brewing adds richness (umami) to the flavor profile. The mouth feel is full and soft. Nice and mellow like jazz music ... 🙂

Made from 100% Yamada Nishiki, this sake has a refreshing aroma and a smooth texture. It tastes slightly sweet with a hint of bitterness afterwards.

No label because the glass was made. Slightly sweet aroma. It tastes like a fresh apple with sourness. The sharpness is good. I paired it with thin sashimi of conger eel. It goes well with ponzu and the sweetness of the conger eel.

This sake is a collaboration label of Mr. Leiji Matsumoto. It has a mellow, rich and deep flavor. It is sweet, but has a crisp and clean finish. The alcohol feeling comes afterwards. If you drink it with plum crystal, the sweetness will increase.

This sake is pressed using the Tenbin-Shibori pressing method. The aroma is like raw sake and apple. At room temperature, it has a mild sweetness, a bitterness that spices up the taste, and a sour aftertaste. At room temperature, the sweetness and bitterness spice up the taste. It is a very gentle sake with no peculiarities, and can be enjoyed at a variety of temperatures from cold to warm. It has a lovely, round taste that will get along well with all kinds of food. Delicious.
