Sake that is refreshing, but has a sturdy, solid flavor. It has a subtle aroma when served cold, and a mild flavor when heated.

I drank too much. It's tangy even though it's the bottom of the bottle.
Green apple-like fresh to dry rice-umami that lives up to its dry description.
The bitterness comes through.
It has a heavy alcohol taste, so it is not something you would drink in a big gulp.
However, it seems to be well balanced with its sharpness and nigori (nigari) mouthfeel.

This is a limited special junmai made from the "Aragashiri" and "Yame" parts of the rice.

The aroma is fruity and gorgeous, and the mild and robust flavor is full in the mouth.
100% "Koshitanrei" produced in Niigata Prefecture is used.
This is the 11th lot brewed in 2021.
It has a strong honey-like sweetness.
But the aftertaste is clean, crisp, and easy to drink.
The bitter aftertaste lingers in the mouth at the end.
Goes great with sushi!
It is supposed to be sweet, but it doesn't interfere at all.

Visited for a little while. The food ingredients are excellent. The food is cooked properly. They fry their food on the spot so you don't have to worry too much about trans fats. In addition, the food is very dry. The sashimi goes without saying.

This is the first time I've had Koshinoshiratori.
I was looking for a spicy sake that I liked, and this is the best hit I've had recently!
I prefer sweet sake, but the balance of spiciness and sweetness is good, and the aftertaste is crisp and easy to drink!
It does have a Niigata-style sake feel to it!
I'd buy Koshinoshiratori again next time it's on sale.
Koshinoshiratori Junmai-shu Unfiltered Nama ~ Cool Limited
A limited edition of Koshino-Shiratori sake brewed by Niigata Daiichi Sake Brewery in Yamama, Niigata.
The design is a refreshing summery white and blue with sparkling fireworks and the surface of the water in waves.
It is brewed with the same unrefined sake as Akaki-Yamama, and then watered down.
It has a strong aroma of rice with a refreshing astringency and bitterness.
It is dry with a refreshing astringent bitterness and a full-bodied umami flavor.

Koshinoshirotori
We had it for the first time!
Yamama, a favorite of the manager here.
A rare sake blended with Arabashiri and Seme (🍶).
The Yamama is delicious, but the blended Koshi-no-Shiratori is just as good!
It was an easy-drinking sake with a ginjo aroma!
There were a few more sakes in the cold storage that we haven't had a chance to try yet, but that will have to wait for another time!
We headed back to the hotel, promising to meet up with our sake friends again!

The sake has a refreshing ginjo aroma and a graceful, luxurious taste.
This time, we dared to use "Koshitanrei" (high-grade rice for sake brewing produced in Niigata Prefecture) for the malted rice, so that you can enjoy the beautiful taste from the time of moromi, and even more elegant sweet and savory flavor. It is produced and bottled in very small quantities from the mountains.

It has been a while since I drank it. The aroma is moderate and there is a soft sweetness of rice, which is different from Niigata dry sake in a good way. It is delicious.
Yamama and Koshi-no-Shiratori are both made by the same Niigata Daiichi Shuzo brewery, but Shiratori is a blend of Aragashiri and Yakusame. The Shirotori is a blend of the two, but the Yamama is a blend of the two. I had enjoyed Yamama before and wanted to try Koshirotori as well.
When I tried it, I found it to be fruity and very easy to drink. I had heard that it was a mix of rough running and blaming, so I imagined it would be heavier, but it wasn't heavy. The taste is a little banana-like, I guess. It is somewhat sweet.
I have heard that Yamama and Koshinoshiratori are both brands that people get into, and they are indeed delicious and the once-in-a-lifetime feeling is very nice. So far, there has been no hassle.
