I went to a liquor store near Niigata Station and asked the clerk, "Do you have any Yamama?" The clerk replied cheerfully, "We are out of Yamama, but we have Koshinoshiratori now. What is it? Koshino Jakucho...?"
The clerk explained that the sake is made in the same tanks as Yamama, and that the middle sake is Yamama, while the aggressive and rough-run sake is Koshino-Shiratori. Well, I didn't know such a sake existed.... It is really amazing.
I immediately had it in a wine glass, and the sweetness, umami, aroma, and gasiness were to my liking....................
The kind I don't usually drink! It is 100% locally produced Koshitanrei.
The aroma is a little tangy, and the body is thick and lean. It is a perfect food sake. It was a little too early for me.
It is similar to the Yamama I drank before! I was convinced that it was made by the same brewer.

Before I drank so much sake, I was impressed by the taste of sake at Ponshukan in Niigata. I always looked for this brand every time I went to a sake shop, but I could never find it in the Tokai area.
Every time I went to a liquor store, I always looked for this brand, but I couldn't find it in the Tokai area... but I found it at a liquor store I stopped by on a whim!
The old impression was still there, and I realized that it is still a delicious sake...!
It may be limited to this year only, or it may come out again next year.

No aroma when opened.
After taking a sip, the mild acidity is quickly followed by the umami. The umami is calm and without any harshness.
Today, we had it with yudofu. It was delicious.

I bought this sake at a liquor store at the end of last year after it had been aged for three years.
The main dish at a New Year's party at an acquaintance's house was crab, so I paired it with a dry sake from Joetsu. The brewery is located in the mountains, and at the Kenshin Sake Festival, I believe, they had a booth next to Yukinakubai.
It is nigori sake, but it is quite hot and dry, not juicy, so it went well with the crab.
We also had a bottle of Shimehari Tsuru as a backup, but we didn't get to it. The New Year party ended with this sake. w
