First time to Niigata for various reasons.
Tonight is a drinking party, but it's my first drink in two weeks, so I'm going to kick back and rehabilitate myself.
It's been a long time since I've tasted Koshinotaka. In Fukui, where most of the sake is medium-bodied, this sake brewery seems to be known for its dry sake. They have been reviewing their style since the change of brewer, and they are going to focus on Junmai Ginjo.
We will have a Sandeshi made from Sakahomare.
Light-bodied with a slight color.
It has a gentle ginjo aroma, but it is not very noticeable. It was introduced as 🍎 at the store.
When you drink it, it gives a moist impression, with a hint of sweetness, along with low acidity, and a bitter taste that finishes with a kick. It is light. There is no cloying taste, which is nice, and it seems to go well with meals.
However, it may lack impact... The standard Jungin is minerally dry and easy to understand, but when Sakahomare, which can easily produce a gentle sweetness, is introduced, the direction may still be a little off. I would like to see a little more flamboyance. Tonight's lineup is light and dry, so I will try to compare the two.
The aroma is subdued yet gorgeous.
The palate is filled with a rich acidity, graininess, and spiciness. There is almost no sweetness, and the spiciness lingers in the aftertaste.

Koshinotaka Kaoroshu Junmai Ginjo.
The ginjo aroma is similar to melon, and the mouthfeel is juicy, sweet and umami, then it finishes with a gentle aftertaste.
What's that? The image of "Koshinotaka" is different from the previous ones.
I like this one.
I bought this sake because I tasted it and thought it was delicious. It is a banana-like sake with a strong umami flavor.
The owner of the liquor store said it was reasonably priced and good for drinking at home. Thank you very much for introducing me to such a nice sake.
Refreshing Summer Sake
Fruity aroma, thick attack. Light and dry. Light and full-bodied.
Accompanied by a summer evening set (shrimp and squid with sea urchin, deep-fried tofu, deep-fried eggplant, stewed beef tendon). So I had to refill my sake 🤣.
