The sake has the typical drinking power of a super-harsh sake, but the daiginjo quality that goes down the throat smoothly and refreshingly comes into play. This is the first sake I opened on New Year's Day.
It was the first time I knew about this brewery and when I looked where it was, I saw it was in Kami Town. In the old days, it would be Nakashinden.
It is soft and gentle on the palate. I wonder if Miyagi sake is often like this. I wonder if it is good to drink with something.
The ginjo aroma is mild, but the umami comes in with an acidity reminiscent of yogurt, and it quickly finishes. I am a luxury consumer who wants a little more assertiveness, even though it is delicious and does not interfere with food. I am a selfish person.
Today's drink of the day is opened here 💁.
It is Tenjo Yumegen Junmai-shu from Miyagi Prefecture.
The aroma is mild and the umami spreads in the mouth, followed by a slight sourness and bitterness.
It has a great umami flavor and is well balanced in terms of attack and defense, making it a perfect mid-meal sake.
It is a pity that it is not easily available in the market.

Another bottle of Tenjomugen received as a year-end gift from a customer 🍶.
It certainly has a good acidity, bitterness and dryness.
It is easy to drink and you will be able to enjoy it without any hesitation.
It's still a good free sake.
Thank you!
I am at my usual restaurant. I paired it with braised yellowtail kama.
Since it was the last drink, it was not fresh, but it tasted calm and delicious.
