I was caught off guard. I picked this up with the unusual name "Miracle Sake" and wasn't expecting much, but it's really good. The rice has a strong flavor and the umami is amazing. This is a winner.
This sake was made from Omachi rice harvested by Akinori Kimura, who is known for his "Miracle Apples," using the Kimura method of natural cultivation without fertilizers or pesticides. I want to try the miracle apple too. Where can I find them?
The mouthfeel is mild. It has a strong sweetness and alcohol taste, and is sticky. Later, umami and acidity follow. The aftertaste disappears, leaving the alcohol taste behind.
This sake allows you to enjoy the taste of rice to the fullest.
