The other day, I gave my father a birthday present: a bottle of freshly squeezed sake from Kagano-i, a sake brewery in his hometown of Itoigawa.
I said it was a gift, but we drank it together and shared some of it.
Kaganoi Sake Brewery has recovered from the Itoigawa fire,
It is the westernmost sake brewery in Niigata.
The aroma is gorgeous and fruity,

Kaganoi does not make a sake lid, so my map of Niigata sake lids is not filled. I think Joetsu Sake Brewery said they were going to make a sake lid this year, but I wonder what happened to that...? There are many breweries in Joetsu area that do not make originally designed sake lids.

Kaganoi Daiginjo, a sake from Itoigawa, Niigata.
It uses medium-hard water, which is rare in Niigata. The hardness of the sake quality is not very apparent. It is full-bodied and mellow, with a strong ginjo character. It has a richness for a Niigata sake. It has umami and sharpness.
The brewery burned down in 2016 and has been rebuilt, but the Noto earthquake has had almost no impact on the brewery.
