I learned about it from a friend of mine who had posted about it before me!
Well, I was drinking so much that I can't remember what it tasted like, but I have a faint memory that it was delicious, so the next time I find it, I'll drink it as soon as possible.
The sake cup I brought as a gift was opened on the spot and the cold sake was poured into it!

Naebayama Two-Stage Brewing" is produced by Naebayama Shuzo, a brewery that has refined its brewing techniques by continuing the delicate and difficult "one-stage brewing" process. Compared to the one-stage brewing "Kosu-Mori," it is a little lighter, smoother, and has a pronounced lactic acidity. It is a sake that offers the sweetness and umami of rice with a refreshing aftertaste.

I'm sure the brewing forest is delicious, but for me, I liked the Naeba-yama 😉.
I drank a lot so I'm a little fuzzy on that one 😂.
The rice used is Gohyakumangoku and Koshibuki.
My first impression was "It's sweet. ❣️
I felt that "Kosu-Mori" was also quite sweet for me, but it seemed more profound than "Kosu-Mori".
It is like licking a muscat candy.
The finish, however, is crisp with just the right amount of bitterness, so the sweetness doesn't linger and it feels refreshing.
It is a delicious drink, but I think it is suitable for different situations.

Modest lactic acidic sweet and sourness is the entry point.
Smooth sweetness spreads on the palate, and a rich bitterness lingers after it drops down the throat.

This two-step brewing is a prototype, but they are going to develop it under the brand name of "Fukanorono-MIZEN".

One cup from the Niigata antenna shop in Omotesando. So crowded in that area there today, surprised I could wait until dinner to drink this. Perhaps more enjoyable if at onsen as label suggests.

(One-stage brewing "Sour Forest" is pricey, but I want to drink it!)
When served warm, you can understand why it is called "matured dry" with its peculiar flavor and sharpness.
It is said to go well with ramen... but it certainly has a peculiar flavor that is as strong as the thicker ramen of today.
It does not seem to go well with light and clear flavored ramen, so I think it would be better to match it with the brewing style brewed here.

This is the first brand name sake I've ever purchased.
It seems to be a new brand from the Naeba Sake Brewery in the brewing forest!
It is very smooth on the palate with a slight bitterness in the aftertaste 🤤.
