apple I love the sweet and sour type of Hiraizumi. This can be put on my "favorite list"! The sweetness and sourness are moderate (compared to Tobirazumi's). It is a little gassy, so it is easy to drink. The flavor is as apple-like as the name suggests. I would like to repeat this sake!

Usually don’t buy from Chiba but the packaging (& to be honest, the price) was good. Plus a Nama. From an internet search learn “Byakuya" is observed in the far north, & “just like the midnight sun, when there is no boundary between day and night and the sun never sets all night, the ingredients are kept partially secret”. So rice, yeast & polishing ratio not disclosed. Agree with the description that there is a nice balance of sweetness and acidity, even if at dinner & not at midnight.

The shape of the glass is also a factor, but even before you put it in your mouth, you can smell the ginjo aroma. A sip, and the gaseous, sour, and spicy flavors spread out in a jiffy. It is the best! I'm going to buy it!

Drinking at home. Golden Week is over and I finally decided to relax. From noon on, I relieve my fatigue with my favorite sake. Today's sake is the first Koshi Junmai Ginjo Chiba. It has a fruity aroma when you open it, and when you bring it to your mouth, sweetness and sourness come to you, and you can feel a slight carbonation. It is a delicious cup that feels like white wine.

As the name suggests, it has a sweet and sour taste like apple🍎, and when poured into a cup🍶, it creates bubbles🫧 and a slight squashy taste. Refreshing, like it goes well with summer ☀️. It really is like apple juice 🧃 and you forget it's sake. Delicious 😋.

With customers in Shinbashi (6) A continuation of yesterday's drinking party (all you can drink) post. Next, based on another member's request, the master chose, Koshi Ringo Kinoene Apple🍎. Sourness. Some sweetness. Fresh! Looks like a drink made with malic acid. The clear bottle makes it hard to take pictures 🥴. The master sat down at our table and we started drinking together 🤣. More and more dangerous!
