I love the sweet and sour type of Hiraizumi.
This can be put on my "favorite list"!
The sweetness and sourness are moderate (compared to Tobirazumi's).
It is a little gassy, so it is easy to drink.
The flavor is as apple-like as the name suggests.
I would like to repeat this sake!

Usually don’t buy from Chiba but the packaging (& to be honest, the price) was good. Plus a Nama. From an internet search learn “Byakuya" is observed in the far north, & “just like the midnight sun, when there is no boundary between day and night and the sun never sets all night, the ingredients are kept partially secret”. So rice, yeast & polishing ratio not disclosed. Agree with the description that there is a nice
balance of sweetness and acidity, even if at dinner & not at midnight.

From noon on, I relieve my fatigue with my favorite sake.
Today's sake is the first Koshi Junmai Ginjo Chiba.
It has a fruity aroma when you open it, and when you bring it to your mouth, sweetness and sourness come to you, and you can feel a slight carbonation.
It is a delicious cup that feels like white wine.
