I was worried about the timing of opening the bottle, but instead of being old, it had a nice mouthfeel.
It was mild for 8 years old, with a clean sweetness and a good bitterness.
It could have been laid down for a few more years.

It is a light, dry Niigata sake with a slightly sweet taste.
It was easy to drink and a nice sake. 🙆♂️

Oumon Junmai Daiginjyo Unfiltered Nama-shu.
This was very fruity, sweet and delicious. I think this was also my favorite type of sake.
I heard from bouken that Oumon is slightly overpriced.

Oumon is only available in the Kansai region from Niigata.
The staff was not present at the booth, so Uma-san brought in some sake for us.
Polishing ratio 50%, Koshi-tanrei, Sake degree -10, 3,500 yen
I guess this is a fire-brewed version of the nama sake we had before.
When I drank it, it was labeled as Junmai Ginjo even though it had 50% polished rice.
I have the impression that the price was high as well.
I don't remember much about this sake, but I remember it being fruity.
Wangmon sweet and tasty 🍶.
Rice 🌾 plum and peanut 🥜 combine to make a sweet and delicious 😋.
Three days after opening the bottle, it changes into a round shape.
The mild strawberry 🍓 and pear 🍐 add a touch of alcohol, and the caramel bittersweetness finishes it off 😋.
Oomon no Yume Yamahai Junmai 🍶.
First of all, it was served cold.
It has a ricey feeling as if it were made from raw rice. It has such a ricey feel. It's definitely delicious warmed up.
And then heated sake.
The attack is a "thud" from the rice and unhulled rice, and the umami increases as well as the original spiciness. The acidity (organic acid) is also present in the back.
It's like, "This would be a winner if paired with salted salmon" 😍.
It's like rice when it's cooled down. It can be paired with anything.
This day I paired it with adult potato salad. It was the strongest level and went well together 🤤.
