Shinsen Junmai Ginjo Yoguchi Unfiltered Nama-shu
Azuma Shuzo
The aroma is fruity and reserved.
When you drink it, you can feel the slight bubbles, which is typical of slightly sweet sake. It is delicious.
Perhaps because the alcohol content is a little high, it feels hot after drinking.
It is an easy-drinking sake, and I would recommend it.

Shinsen Shiboritate Junmai Ginjo
Azuma Shuzo
It has a gentle aroma, but when you drink it, it has a nice sharpness and dryness.
The aftertaste is long and enjoyable.
Is it a little acidic? Maybe it would be better if it were heated up?

At a sushi restaurant in Kanazawa.
I imagined it would be thicker than I expected when I heard it was called "Dorokuchi," but it had a light flavor with a hint of sweetness that quickly disappeared, making it easy to drink, even with its high alcohol content of 19%.
Personally, I thought it was dry and just what I imagined Ishikawa sake would be like.
It was very easy to drink, as if it had been made with a kick and the unpleasant parts had been removed!

Also from Ishikawa Prefecture.
The unfiltered, unpasteurized sake is a summer-only sake and is ras 1 at the brewery.
I like Ishikawa's sake rice, Hyakumangoku No Shiro, so when I see it, I can't help but buy it.
It's so dry!
It's like the sweetness of the rice spreads out, but there's also some sakeiness there. Aroma? Floral? It has a floral aroma.
Naturally 100% compatible with fish marinated in sake lees!
