Fruity aroma like a melon before it ripens. Despite the aroma, when you take a sip, you will be surprised to find that it is very robust and full of umami. It has umami and acidity, but as is typical of Mizuo, the aftertaste is clean and not sticky. It goes well with sweet fruits (persimmon, etc.), nuts, and cheese. It may also go well with strong flavored foods. It has a slight carbonation immediately after opening the bottle, but after a few days, the aroma and robustness become more powerful. ⤴️ I was not a fan of the acidity characteristic of Kinmon-nishiki, but it was delicious because it had been aged.

The top aroma is like honey. When you sip it, you will be surprised by its slightly carbonated taste, rich umami, and acidity. It also has an astringent taste like cacao and almonds, giving it a hiyaoroshi-like image. It also has a chocolate-like flavor. The overt aroma is bitter. I thought it was quite different from ordinary special junmai Kinmon-nishiki. It is quite strong. It is better to drink during a meal. It went well with stir-fried beef. Is it similar to the Akigarashi of Kuroemon XVI? Kinmon Nishiki Rice polishing ratio 59 Alcohol 17%.

I don't drink much other than cold sake, but since it was cold, I had it hot and served with seafood hot pot. I think it is refreshingly dry. It is good as a food sake. The two of us quickly finished it.

It is a delicious sake with a slightly sweet flavor. It has no sense of maturity and is moderately round. I felt an astringent taste in the latter half. I hadn't had Mizuo in many years, It was as good as ever. ‼️

Rice Ingredients: Rice, Rice malt Rice: 100% Kinmon-nishiki (produced in Kijimadaira, Nagano) Rice polishing ratio: 59 Alcohol content: 16 Tomorrow is my day off too so I will drink 😁. However, my gym starts at 8am, so I'm going to sleep quickly after this. I'm very busy after the gym, going to the library, English conversation, picking up alcohol, buying subscriptions, etc. Thank goodness for the 3-day weekend. I thought it would be sweet because it is Kinmon-nishiki, but it is dry. I thought it would be sweet because of Kinmon-nishiki, but it was dry. This is the third bottle of hiyaoroshi this week. I think it is the hottest. But when it's in the middle of a meal, it feels sweeter and sweeter. It is dark, tasty and delicious. I was happy to drink many kinds of sake this weekend 🥰.
