The aroma is sweet with a hint of Nagano. It's not like fruit, but I'm sorry I don't have the vocabulary for that.
When you drink it, it has a beautiful acidity and umami, and if I were to describe it in color, it would be yellow-green or fluorescent. It has a good balance with the sweetness of the aroma. The umami spreads further, and then it ends with bitterness. It leaves a nice aroma on the tongue. Delicious. ❗️
I've seen Mizuo at the liquor store I sometimes go to, but I've never had it before. It seems to go really well with meals 😊Thanks ❤️
Commentary.
Mizuo is specially dry. It is very popular locally. It has a refreshing taste with a subtle aroma, and can be enjoyed either chilled or hot. The koji rice is made from Hitogokochi or Yamae Nishiki, a 59% polished rice suitable for sake brewing.
On the palate, it had an impact, but soon became docile. It is delicious.

The sake rice is Yamae Nishiki produced in the local area of Iiyama.
It is not the juicy type of sake that is popular in Nagano Prefecture, but it has a clean and refreshing taste with a calm nourishing flavor that is wonderful as a mid-meal sake.
Our original plan for the day was to go to Kamakura and have lunch at Ozawa (tamago-yaki), but due to train delays, we suddenly changed to the Tokyo Metropolitan Arakawa Line (Tokyo Sakura Tram) course, played at Arakawa Amusement Park, and stopped by Asukayama Park in Oji.
As a result, we were able to enjoy hydrangea at Asukayama Park and Tamagoyaki (ogi-yaki) at Ogiya, and succeeded in making a wonderful substitute.
