The initial aroma is like honey. When you drink it, a strong acidity or sourness spreads, and it has a slightly carbonated feel, which gives it a sharp kick. This is delicious. The sourness is addictive. The aroma is that of junmai (pure rice). There is not much sweetness, but a pleasant dry taste. It can be enjoyed on its own, but it is recommended to be drunk with food. It is drier and more sour than Mizuo's raw sake. It went well with stir-fried pork belly and bean sprouts, and the sourness continued even on the second and third days.
My favorite!

Kinmon-nishiki produced in Kijimadaira Village, Nagano Prefecture
(Iida City, Nagano Prefecture/Tanakaya Sake Brewery)
Hankyu Umeda Main Store, 9th Traveling SAKE ⑫
Mizuo is another sake I wanted to try. The person who helped me was Takumi-san, the son of the sixth-generation brewer. He was a young man with an Afro-like perm.
The brewery is located on the border of Nagano and Niigata prefectures.
It is said to be brewed so that the bitterness of Kinmon-nishiki can be tasted.
It is brewed to suit local cuisine, and 85% of the brewery's customers are local and 15% are from outside the prefecture.
Mizuo Tokubetsu Junmai Kinmon Nishiki Brewing
It has a clean, clean taste with a strong umami and bitterness. The umami spreads slowly.
Mizuo Junmai Ginjo
The aroma is subtle, and the overall taste is clear. Prefer the special junmai.
Mizuo Ichimi
Sake meter rating +7. It has an umami aftertaste and is crisp and not too spicy. It seems to be popular at an eel restaurant near the brewery.
Mizuo Junmai Daiginjo
The base is the same as the special junmai. The aroma is fruity, with a bit of tasty acidity. It is also my favorite. It is intentionally made to be drunk at a leisurely pace.
Mizuo Ichihachi
It is said to be brewed for the sake competition. It is very sweet, full-bodied, and quite delicious. It is extremely delicious. Almost water.
There were many Mizuo's that were also delicious.
Good evening, Mr. Nemuchi.
I am very jealous of this tasting 😻When you came to Isetan before, you recommended Kinmon-nishiki so much but I couldn't buy it 💦It's nice to be able to compare so much in Kinmon-nishiki 😊👍.
Pon-chan, good evening 🌛The tasting of Mizuo was good 👍They use Kinmon-nishiki to match the local cuisine 😊The bitterness was interesting as it accentuated the delicious flavor 😆.
I bought it at a liquor store in Tenga-chaya.
The description says that it is a "food sake that doesn't interfere with food..." This is exactly what I got the impression.
When the bottle is opened, the impression changes a little, which is nice.
