Fruity aroma like a melon before it ripens. Despite the aroma, when you take a sip, you will be surprised to find that it is very robust and full of umami. It has umami and acidity, but as is typical of Mizuo, the aftertaste is clean and not sticky. It goes well with sweet fruits (persimmon, etc.), nuts, and cheese. It may also go well with strong flavored foods.
It has a slight carbonation immediately after opening the bottle, but after a few days, the aroma and robustness become more powerful. ⤴️
I was not a fan of the acidity characteristic of Kinmon-nishiki, but it was delicious because it had been aged.
