The wine has been in the cellar for 2022. The aroma is mild, and when you drink it, you can taste the delicious flavor of rice with a hint of bitterness in the aftertaste. Perhaps it is because it has been aged for a long time, but it has a mellow finish. The taste is far removed from that of the first bottling. Tanigawadake is a sake that is good with food, so tonight I will enjoy it with hokke (hokke) and 🐟. Polishing ratio 70%.

Fruity aroma like a melon before it ripens. Despite the aroma, when you take a sip, you will be surprised to find that it is very robust and full of umami. It has umami and acidity, but as is typical of Mizuo, the aftertaste is clean and not sticky. It goes well with sweet fruits (persimmon, etc.), nuts, and cheese. It may also go well with strong flavored foods. It has a slight carbonation immediately after opening the bottle, but after a few days, the aroma and robustness become more powerful. ⤴️ I was not a fan of the acidity characteristic of Kinmon-nishiki, but it was delicious because it had been aged.

It is a mild Yamahai. It has acidity and umami characteristic of Yamahai, but they do not come on strong. As recommended, serve cold or hot. It is best served cold or hot, as recommended, but the umami spreads quickly when heated, so it is perfect with hot pot this season. You can drink it all the time with dashi broth and hot sake.

Although it is listed as super-harsh +14, it felt more like a mild food sake than a spicy sake, probably because it was laid down in the last glass. It has just the right amount of umami and acidity, and although it is a draft sake, it would be good warmed up. Overall, I have the image of Mie sake as having a good balance of umami and sweetness.
