As the label says, different rice is used for each of the yeast and brewing process...
All of that rice is also from Nishigama, which suggests that it was grown with care 🌾.
In Niigata City's Nishigama Ward, there are Iwamuro Onsen (hot springs), Kakudahama where wineries are located, the brewery Sasashuku Shuzo, and Hasegawa-ya where we purchased the sake 🌊.
The aroma that rises is a strong, natural aroma of rice, with a hint of ripeness. There is little fruitiness 😌.
Various flavors are present in the mouth 🤤.
Sweetness and acidity are strong.
There is still a sense of maturity in the spiciness, astringency, and bitterness, with a hint of fruitiness ❔ and a light salty taste ❔.
And the core of the wine was a robust rice flavor that sat at the core throughout 😋 I could feel the power of the rice 💪.
Very rich in a way✨
Just a little expensive!
One cup, 500 yen 💦.
At Niigata Station Ponshukan on a business trip to Niigata.
A colleague who accompanied me bought me a jacket cup of sake.
The taste is a light, dry sake reminiscent of Niigata.
It is a robust sake with a sharp taste.
I hadn't had this kind of sake recently,
I enjoyed it very much.
Drinking sake on the Shinkansen with takobutsu (octopus) is very special.
Good morning Jay & Nobby!
I didn't mind because it was empty and everyone around me was also opening izakaya 😂 lol.
It's times like this when you wish you could arrive in Tokyo a little slower 🤣.
Rice used is Gohyakumangoku
The acidity is effective, and the umami flavor is penetrating.
It has been a long time since this sake had the impact of a sake made from a traditional sake yeast yeast yeast.
What is re-fermented sake?
It looks sweet, and it certainly is sweet.
Not sweet like sugar, but a bit like aged sake, sweet and dark - I guess.
It's not the sweetness I was expecting.
I'm going to mention the name, but it's more like a sweet aperitif from a cotton shop.
It has a strong alcohol taste.
I guess it's not for everyone.
I wonder what would be a good accompaniment for this type of drink that leaves a strong aftertaste. Maybe cheese would be good.
Tourism Expo Japan 2023 Report 11📝.
Next, I found a place where you can compare Niigata's sake at the refreshment booth 👀.
It was 1,500 yen for 3 bottles, so I tried some brands that are a bit expensive and I don't drink at home very often.
The first bottle was Sasashuku's Shukubuki Yellow Label.
I looked it up and found that there are five kinds of Shukubuki, and the yellow label says it is multi-acidic.
It is indeed an adult lemon squash with a little more acidity.
It was just the right flavor to reset my palate after drinking so much.
Good evening, Mr. Yoohee😃.
There was a hi-iru version of this sake sold at Azuma Tsuru 😊.
I was curious because I had a feeling it was a weird sake because it said it had -15 sake and strong acidity 🤣.
Good morning bouken-san ☀︎
Yes, you are right, putting such a maniacal sake in the bottle 👍.
It wasn't as sour as I thought it would be, but to the average person, it would be a perverted sake lol.
Second bottle this year
Delicious at room temperature to lukewarm.
Sasashuku Sake Brewery in Niigata is fun because they serve a wide variety of sake! This is my favorite brewery!
A cool way to stop by and enjoy a hot spring: ♨️
Take just a sip!
It's delicious with the aroma of cedar barrels!
It's a bit heavy at the beginning of the New Year, but I feel a little better.
Thank you all for your continued support this year. 🙇♂️
