I got this sake from Kadoya's hanpukai 😀.
I've been wanting to try this sake for a long time and now I can finally try it for the first time with the hanpukai 🤣.
I also prepared a bottle at room temperature for tasting practice, but this sake tastes much better chilled 😀.
Utakata means bubbles, and when chilled, you can feel the bubbles coming out of nowhere, which is my favorite flavor 😀.

We too have been curious about this but haven't had the chance to drink any of the Yamazan no Kotobuki yet 🥲This is a great tasting exercise in temperature differences👍It is by far better when chilled! Thanks for the reference 🤗

This sake comes with a note that it must be served chilled, so I guess the creator's sake quality design is brewed with chilled conditions in mind😇.
It was hard to mow the grass today, even though it was cloudy.
It was hot and humid, and the reward for such a day was "Yama no Kotobuki" (long life in the mountains).
It has a fizzy, slightly pineapple taste and a little sweetness.
It's a little sweet, and it makes you sweat pleasantly.

The nose evokes ripe sweetness like cemedine and banana. The clean mouthfeel gives way to a slight sweetness and minerality, from which the minerality and bitterness increase. The wine finishes with a simple spiciness and lingering bitterness.
I would like to match it with grilled river fish to take advantage of the bitterness. Anything that goes with beer seems to go well with it.
