Local famous sake, one of a kind ❗️ I found it at Yamaya and bought it immediately. I am a genuine nigori lover ❤️ I also keep Hirotogawa, so I have a four-pack of it. Takamiyama is 2x, but this is 5x ‼️ This is soooo good 😳 Is it as good as Hirotogawa? I want everyone to try it 🙏! If it's sake, it's one 🎵If it's sake, it's one 🎵

Sake from Ibaraki after a long time The previous sake I had was a Tochigi sake made from Omachi, so I decided to have another Omachi sake! I heard from the liquor store that it tastes good warmed up a little, so I tried it cold and lukewarm 🍶. It is true that the sake is delicious when drunk cold, with its ginjo aroma and dry taste, but when drunk warm, you can feel the flavor of the rice spreading on your palate. We enjoyed it with Satsuma-age (fried fish cake) as a side dish.

It is as dry and refreshing as I have heard. But it tastes more like carpaccio than sashimi. More like aqua pazza than grilled fish. I guess you could call it a white wine position...? Also, it goes well with fish roe. I am sure it would go well with crabmeat, too. I think it goes well with fish and shellfish that have a certain habit.

The third drinking train. However, this is a long-seat train with quite a lot of people. So I refrained from taking pictures of the train interior. The train moves through a wide plain with no mountains around. It is nice and spacious! The sake has a delicious flavor, followed by an aroma. It tastes a little sour, so it is refreshing, but it is rich. However, after a while, it disappears from your mouth. It is a sake that can be enjoyed without any accompaniments.

It is a bit dry, but not too dry. You can taste the umami with the taste of rice that is typical of junmai, but it is not too strong. I paired it with sushi, and it goes well with it. While enjoying the taste of the sake, the main role is played by the food, which is a nice touch!

Rice polishing ratio 70%. Alcohol content 14%. One of the four brands selected for the Ibaraki Prefecture "Sake Young Sake Breweries Revitalization Project" ✨. This is the "Sugi" version of "Ibafore", which you can taste your favorite keg-style sake by adding "Sugi" or "Hinoki" sticks. I bought a 300ml bottle of this one, so I decided to add a stick without tasting it, assuming that the sake would be the same as the "Hinoki". 1 day, the aroma was slightly woody with a strong sour impression, 3 days, the aroma was stronger and more refreshing, and on the 6th day, a slight astringency seemed to have been added. It tastes completely different from "Hinoki", maybe not only the stick but also the sake was different? It makes me think😅.

This is the "Hinoki" version of "Ibafore," a sake made with either "Sugi" (Japanese cedar) or "Hinoki" (Japanese cypress) sticks, allowing you to enjoy your favorite barrel-style sake. Tasting the opened bottle, the taste is clear with no peculiarities. On the first day after putting the stick in, it smelled like drinking from a Masu, and on the third day, I took the stick out, feeling that it was completely barrel sake. I wish I could have tried it for a few more days 😁, although my husband is not a big fan of wood-scented sake, so that's not an option.
