Rediscovering. Works a bit better this time with fried and stewed food.

Crisp, fresh, aromatic. While 日本酒度 is at +4.5, the acidity is all the way up to 2.0, which makes it it still dry, but not too subtle. Great with western food.

Found in my local supermarket. Really wanted to try this sake made by an English toji and was not disappointed. Excellent with saba + kasane jikomi + fresh wasabi!

A bit too exotic for my taste. The claim for oldest yeast is disputed by Wakatakeya's Yoko O (150 years old).
