Shuho Junmai Ginjo BeachSide. surprisingly gorgeous. It has an impression of tropical flowers and fruits. I feel like I'm being pulled in by the label, though.
It would be delicious with cider.
Today, I was heading home after work when I was hit by a guerrilla downpour and couldn't make it home.
We started with Aizu Nakasyo Summer Limited Junmai Ginjo (......). Oh, they didn't have a bottle. I was happy but a little disappointed.
It is quite fresh and refreshing, but has a thick core of acidity. The umami is also well balanced.
Makiki Junmai Ginjo AKATSUKI Unfiltered Nama-shu. It's this sake with Takachiyo Shuzo, isn't it?
It's the opening of the first saké!
The opening of the mouth of the raw sake is a delightful one. The fruity acidity spreads. The taste is light and gentle, with a full aroma that spreads smoothly. I can't get enough of it.

Today I went to FUKU NO TORI Kojimachi. I was sorry I hadn't been here recently, so I entered the restaurant while saying hello to the owner, who had come out before the ...... store.
First up was the Aizu Nakasyo Summer Limited Edition Ginjo-shu. It is light and refreshing, as is typical of aluzoe. It is refreshing and easy to drink. I had been paying attention to this sake for a while, but I didn't know that summer sake is like this.
Ganki Junmai Unfiltered Nama Sake. I like Harada for Yamaguchi Prefecture's local sake, but I also like Ganki in some way. It is naturally dark since it is an unfiltered, unpasteurized sake, but the light, loose feel does not make it seem heavy.
Mutsu Hachisen Urara. This is Mutsu Hachisen's spring sake, but I've never seen it before. The gorgeous aroma, light flavor, and subtle sweetness typical of Mutsu Hachisen make me think it is a spring sake. I think this will soon be out of season, too, and the seasons change so quickly.
Tonight we went to Fukuno Tori Kojimachi for the first time in a little while. I had almost no sake before, so I adjusted my timing today.
First up was Eiko-Fuji Itsusen Kaze-Blade. I had this relatively recently, but if the restaurant changes, so does the taste. However, the strength of flavor and umami is still the same.
Otokoyama Gin-sen. This is Otokoyama in Yamaguchi Prefecture. I think this will be the last one. It is a standard sake at this restaurant, a honjozo type, so it is a little peculiar when drunk at this time. But it is good. This boldness of flavor is pleasant.
Toyo Bijin Jyundo Ittou Limited Junmai Ginjo Nao Kumi Nama. Well, it is indeed a delicious raw sake. It is gorgeous, yet has a deep flavor. After all, Toyo Bijin is a fun sake to drink.
After work, I went to FUKU NO TORI Kojimachi.
The owner told me, "If you came tomorrow, we would have plenty of sake. He said, "We ordered the sake today, so we only have the permanent selection. Well, even so, there are four stable brands of Yamaguchi Prefecture's local sake, so I have nothing to complain about.
So, I had a pint of Ganki Junmai Unfiltered Nama-shu. Soft umami and acidity. I like Yamaguchi Prefecture, after all, and there are many good sake in the prefecture besides the well-known ones.
Toyo Bijin Jyundo Ittou Limited Junmai Ginjo Saito no Shizuku. Yay, it's time to open the mouth٩٩_(ãƒ')
Saito no Shizuku is a new sake rice developed in Yamaguchi Prefecture in recent years. This is the first sake brewed with this rice. It has a nice, clean yet rich flavor. The aroma is beautiful.
And even in such a situation, Mr. Fu is drinking Poshake as usual.
Today we went to FUKUNOTORI Kojimachi for the first time in a while, maybe two months. We were told that there was no shortage of sake, which made our hearts dance.
First, we start with Saku Honochi. Today's appetizer is a thick-baked egg with crabmeat sauce. Saku has a beautiful taste. It has a clear and distinct umami flavor, yet it also has a sourness that is sharp and clean. The balance of the flavors is irresistible.
Since Tomikyucho did not have a small plate to pour, we were served a cup of Kurogyu Junmai Shu Aki-agari as a service. It is very rich, with great umami and full-bodied flavor. The aroma is a bit strong, but it has a roundness to it that is typical of autumn sake. But it has a roundness to it and a soft, autumnal taste.
Tomikyucho Dry Junmai Summer ...... Summer! This one survived quite well again, though it was only slightly shy of 1 gou, and there was no spillage from the glass to the small plate. It's dry and has a cool, refreshing taste, but it's been here for half a year, so it has a rounded flavor. Still, it's a good thing that it hasn't been oxidized and ruined.
Ganki Junmai Unfiltered Nama Sake. This is one of the standard items at this store. It is a sake from Yamaguchi Prefecture.
It has a strong umami and a refreshing acidity. It has a lingering taste.
Today we went to FUKU NO TORI Kojimachi for the first time in a while. It was quiet because it was Christmas Day, and the staff consisted of the owner and the manager.
After checking the sake available, I ordered Minami Special Junmai Hiyoroshi (Hiyoroshi) ......, which means "mouth-opening"! At this time of year! I asked, and was told that it was supposed to arrive in mid-November, but was delayed and came into the store at the beginning of December. And it missed the hiyaoroshi season, so no one has touched it until now. ...... It's a shame, because it's a delicious sake.
The taste is round and moderately dry, just like hiyaoroshi.
Takachiyo Halloween label. The label says that it is an unfiltered, raw sake made from flat-polished rice. It has a strong cloudy cloudy taste due to the unfiltered nature of the rice. The taste is a little rough with a little bit of a tangy taste, but the strong umami and slight acidity that comes rushing in. I can't get enough of it.
Tatenogawa Junmai Daiginjo Genryu Cold Wholesale. Well, I'm glad I could drink it. I thought autumn would end without being able to drink it this year.
It has a strong umami and a roundness of flavor that is typical of hiyaoroshi. And yet it has a cool and sweet taste that goes down the back of the throat smoothly, as one would expect from Tatenogawa. I can't get enough of this depth of flavor.
Today, we are going to visit FUKU NO TORI Kojimachi branch, which we have been wanting to come for a long time but couldn't, to have some sake.
It's been a while since I've had one from Toyo Bijin. It is a limited edition Junmai Ginjo Aizan. It's the Toyo Bijin of Aizan!
I can't get enough of its sweet aroma like muscat. The word "sweet and delicious" fits it well. This is why Toyo Bijin is my favorite sake from Yamaguchi Prefecture.
