Zan" dolphin label🐬. It looks kind of cute and looks like it would look good on social media. I haven't had Kaneta Tamada's sake since I had Hana Ippu last year 🤔. The nose has a slight lactic acidity. When you put it in your mouth, you can feel the light gas from the secondary fermentation in the bottle. The light nigori sweetness is not too sweet, not too dry, and not too bitter. It was quite delicious 🍶✨.

I had to cut back on drinking because my nose wasn't working 😷, but now that I'm mostly back to normal, I went out drinking for the first time in two weeks🍶. My first match was with Natsujun by 🕊, the brewer of Hana-buki. It has a sweet aroma on the nose. When you put it in your mouth, it has a mild juicy sweetness with a slight astringency. The taste is a little acidic and slightly astringent, and it finishes with a crisp finish. It's a very crisp sake that is typical of Hana Fukietsu and is delicious ✨.

Jokku silver label🍶 introduced on the menu at Apple Blossom as a local staple sake. It is a fire-aged sake. The top aroma is slightly sweet. It has a slight sweetness and a mild umami flavor in the mouth. It has a slightly dry taste with a clean aftertaste. I had the impression that the Jyokuro (nama-shu) I have had so far had a bitter aftertaste, but this one, perhaps because it is fire-aged, has no bitterness and is mildly mellow (😋). It was quite delicious 🍶✨.

Hakutsuru's summer sake 🍉. This sake is made with malic acid yeast 🍶. The aroma on the nose is like sweet and sour 🍎. The mouthfeel is mildly sweet with malic acid sweetness. It was refreshing and delicious, just like a summer sake ✨.

This sake came out last December, and I had given up on it because I couldn't get a four-pack in Tokyo, but I saw a notice on Instagram that Ringo no Hana in Yotsuya-sanchome had it in stock, so I had a drink right away 🍶. The first aroma is soft and sweet like honey. It has a mild sweetness with a hint of richness in the mouth and finishes cleanly. I wonder if this mellowness is due to the fact that it has been aged for half a year. It's so good 🤔. I will definitely buy it next year 🍶✨.

Next up was Hato Masamune's Kamisen 🕊 sugar-added sake. You can't find this kind of sake anywhere but Aomori 😆. The first aroma is slightly sweet. When you put it in your mouth, it is a little sweet for a Hato sake. I wonder if this would go well with Towada's famous sweet and spicy sauce for roasted bara 🤔. It's a little dangerous because it's easy to drink without any bad taste, but it's so sweet that you might get bored in the middle 😅. I think I prefer Aruzoe's Hakkouda Oroshi 🕊.

I had a drinking party in Arakicho, Shinjuku, but I had some time to spare, so I went to an izakaya that stocks Aomori sake, which is rare in Tokyo 🍶😅. First up was Sekinoi in Mutsu City on the Shimokita Peninsula. The lady at the store told me that the brewery usually makes sweet sake, which is not typical of Aomori, but this is the "back" Sekinoi, a very dry sake. This is the first time for me to try it. The initial aroma has a hint of classic acidity. The mouthfeel is a robust, complex, umakuchi type. It also has a hint of sweetness with umami. It is said to have a Sake meter of +10, but the umami is so good that you don't feel it. It would be interesting to heat it up. I'd like to try a regular Sekinoi or another brand of Kantatema. It's pretty good 🍶🐎.
