For a sake like Amefall, which is known for having a clear concept for each sake, I am not sure what kind of concept it is.
First, there is a rice-like umami, followed by a slightly strong tropical fruit-like acidity, with a little lactic acidity (typical of mizu-hashiroshi) coming later...
The sweetness is quite low, and the acidity disappears in the aftertaste, leaving only the umami typical of mellow, dry sake.
Hmmm... I wonder if it's a bit raw...

Very mild aroma.
In contrast, the taste has a pineapple-like mouthfeel with a hint of hana-hyo-yaki, with a good balance of sweet and sour flavors.
The umami almost disappears with the sweetness and acidity before it appears.
Beautifully balanced, but not too much so.
I like Shinshu Kamerei better if it's from the same family.
Maybe it's not good to start with Ginsen.

A fresh and aromatic sake that you would not expect to find in a hi-ire.

The tanginess and the tingling sensation that lingers in the throat is just too much!

Then acidity, bitterness, a little sweetness, and a nice finish that quickly disappears as the gasiness fades away.
The overall taste is like a grapefruit sour, although the umami has a sake-like quality.
Dangerous to drink like a sour!
4.50 KFloral but mellow aroma with a strong umami.
Sweet and delicious as is typical of Shinshu Kamerei, but with a rich Yamadanishiki-like flavor that is distinctly different from other sake rice from Nagano.
It is expressed without sacrificing any of the Shinshu Kamerei character.

The yoghurt-like acidity typical of mizu-hashiroshi precedes the taste, and it is not as floral as expected for Aizan.
It has more umami than Shunyo, and the aftertaste is also more typical of sake, but it is still a bit lacking for Aizan.
I guess Amefall is basically a refreshing fruity type of sake.

Nigori sake with a fresh, muscat-like acidity.
The mild sweetness that remains from start to finish enhances the lingering acidity that gradually disappears after the rather strong sourness at the entrance.
A truly refreshing yet satisfying sake, good to drink during this hot season!

Sweet and juicy, but with Omachi-like richness and bitterness.
Therefore, the pineapple flavor is less pronounced than Yamadanishiki.
I personally rate it lower than Yamadanishiki because I don't like the Omachi-like feeling, but it still has no heaviness at all!
The aftertaste is wonderful, with the bitterness giving it a sharp edge.
