It is dry and refreshing, but the rice flavor is mellow and full-bodied! Delicious! I really liked the Aoyama-hori on the left, but I couldn't find any information about it when I looked it up 🥲.

I really recommend the Kaku-uchi pairing set at Tsukiya-ya. The tastes of the entrées are delicious and too much fun, such as the dashiwari sake only available here and the comparison of heated sake flavors in large-medium-small flat sake cups. The heated Shirataka Umeshu (plum wine) with dashiwari was especially delicious, and tasted as if it contained plum flesh. I challenged myself to taste that impression at home. Since Shirataka was sold out, I tried Shiraoi's plum wine, which I had on hand. I managed to reproduce the fleshy taste of plums with 80% bonito kelp broth and 20% plum wine, and I would like to pair it with tempura tonight.

The 24th day of the month is the Winter Solstice. The sake of choice was Zanzou Horai's special junmai Dewa Sanzan. The seasonal appetizer was yuzu-scented buri daikon (yellowtail and radish). It has a fruity aroma like a pear. The acidity stands out in a good way. It is also full-bodied. We are happy to find that the label matches the image of the aroma and taste. I would have preferred a more fruity snack.

The second new sake from Zanso Hourai. Slightly zesty aroma. There is a melon-like spread after the appleiness. The sweetness is strong, but the astringency of the aftertaste is very strong. It also has a freshness or roughness that is typical of new sake. It is a wonderful sake.

Sawanoi purchased at Kyodo Tsukiya Sake Shop. It has a unique aroma typical of sake yeast yeast. The color is almost colorless. I wonder what it is? It is not fruity, but it has a spread of umami like mirin (sweet sake). It is a pure rice made from the royal road, and I am very happy with it. The taste is straightforward.

New sake from Zanso Hourai. Fine bubbles are visible. The aroma is faintly reminiscent of cucumber fruits. There is a strong astringency and bitterness, but there is also a hint of sweetness. It has a melon-like overtone and sweetness. The first liquor store I visited in Kyodo. They seem to be able to serve Zanzou all year round. I am glad to hear that they are also actively serving Sawanoi.

Shoryu Hourai hiyaoroshi. Is there such a thing as the "Dry Master" series? It has a characteristic flavor of a sake yeast yeast yeast with plenty of umami and sweetness. And this sharpness...oh my, it might have more impact than Zanzou's hiyaoroshi. I want to be an apprentice to the master of dry sake.

The day when we can have a bottle of Zanso Hourai hiyaoroshi has finally arrived... Last year, we couldn't find it even though we looked for it in many places, so we gave up on it. I am grateful to my wife who went on an errand for me. The aroma has a hint of grape-like sweetness? Dry...just dry. Surprise! It's like a dragon. But it has a grape-like flavor, but it's still dry...this was a surprise. But it's delicious.
