It is my favorite Zanso Hourai and my favorite Hiyoroshi. The aroma is somewhat reminiscent of the forest. The attack and the aftertaste are both refreshing and bitter like green mint. And when you taste it carefully, you can feel the umami of rice. This seems to go well with rich autumn flavors, but it was still too early in the season, so I could only prepare my usual gizzard. I wonder...maybe grilled salt-crusted swordfish? It seems to go well with the fat of the fish.
