It has a strong, weighty flavor with a good crispness. The high alcohol content of the original sake also plays a role in the good balance.
My favorite degree ★★☆☆
It is undiluted sake, but the sweetness comes to the fore rather than the alcohol. It's a shame because it's a little too sweet. The label says it has a "fresh aroma", but the sweetness comes to the fore anyway. The sharpness is good.

This is "Ich Fat" No.10 yeast. The alcohol is 16.7%.
It is full-bodied with a hint of acidity. The sharpness is good. The strength of the original sake is good.
Maybe it's because I haven't had any sake in a while, but it's still good!
My favorite degree ★★☆☆
The blue square bottle is beautiful. I don't usually choose daiginjo, so this was a gift.
It has a clean, fruity, dry taste. Elegant and tasty. The sweetness lingers a bit.

This is my first Hyakushun. I forgot to mention that this is a "14" Kyokai No.14 yeast.
It is quite good. At first you can taste the sweetness, but the sourness soon follows. It is 17% alcohol, but you don't feel the alcohol so strongly. It has a well-balanced taste, which I like.
My favorite degree ★★☆☆
Immediately after opening the bottle, you can still taste the same umami, but the sweetness seems to be too strong for me.
As time goes by, various flavors come out and the balance becomes better.

The usual goodness of Zijima. I think it's the 100% Senbonishiki rice that makes it a little sweet. It has a strong umami taste and a touch of acidity. As usual, I couldn't help but say, "Yum! The light pink label is cute.

80% Gohyakumangoku, 20% Yamadanishiki. Rice polishing ratio: 80%.
I was able to get a bottle of this.
It is still delicious. I like it. It has a strong umami flavor, but it is also crisp. It also has a nice aroma through the nose.
So I drank it 3 days in a row and it was empty ^_^.

Hiyaoroshi for the first time this year.
Gentle umami. Clean aroma. Good sharpness.
The taste and aroma swells when exposed to air.

It's been a long time since I've had Yamahai. It's still good!
Some people say that Yamahai has a big difference between "good" and "bad", but this one is good!
The color is a little yellowish and the acidity is moderate.
It is a little tangy, probably because it is 17% undiluted sake.
It has a good balance of umami, sweetness and sourness.
How I like it: ★★
The label is cute. It's a little bitter when you open the bottle, but after a while it starts to taste sweet. It's billed as "watermelon and lemon," but I can't detect any aroma yet. Towards the end of the drink, the fruit smell and sweetness stood out.

This is a sake from Murakami City in Niigata Prefecture. There are only about 30 liquor stores in Japan that carry "Muso", but I'm lucky enough to find it at my local liquor store, so I buy it every time I go there.
This "Shinzei" is very lightly foamed and has a delicious sharp spiciness. I also like the fullness, sharpness, and the aroma through the nose.
My favorite: ★★★★★
It's so good!
I haven't had Jikan in a while, but I still love it!
It has a mild sweetness, but is crisp and clean.
It has a slight fizz to it.
The aroma that goes through the nose is very good.
