Shinsei Shuzo Shozo, Ikimasa Junmai Sato Uhei. The first time I knew this sake when I went to Akita and entered a liquor store. Very gorgeous and easy to drink, goes down smoothly. If it's not limited to Akita, I would always keep a bottle in the fridge.

Fujii Honke Asahi Hijin Fukafu Sake - MIST. When I went to Kyoto, I went to Shiga to buy it. I bought it because I thought it was sweet and slightly sparkling, but it had a strong smell and a sticky texture that made it difficult to drink. It's hard to explore new drinks.

Fumotoi Shuzo Junmai Ginjo Fumotowi. I bought it on a trip to Yamagata, looking for a sake I didn't know existed. I opened it at a ryokan, but I didn't like the smell and couldn't drink it. It is difficult to find a good sake.

Nakayo Shuzo Junmai Daiginjo Shizuku Shibori, Umaguchi Special Junmai Tenjo Mugen. I bought this sake because it has a cool name. It has a very strong sense of Japanese sake. The shizukuji was very good, but I thought it would be like this if the sake was made very carefully and seriously. I don't like some of them, but I think Special Junmai goes to cooking sake.

Aizu Musume Junmai Ginjo from Takahashi Shosaku Shuzo. I wonder if there are people who think this sake is bad. It is the person who dropped me into the Fukushima swamp. It has a beautiful name, but the aroma is also very attractive. If I were to compare it to a banana, it would be like a banana. It is my favorite sake in Aizu.

Kunigon Shuzo Junmai Ginjo Autumn Agari. I met Kokugon when I was asked to give it to my apprentice at the best Italian restaurant in Minami Aizu. Why does the sake that is given as a gift to others look so delicious? It's calm and easy to drink, yet it's thick and rich. It has an aroma like a pineapple. We are looking forward to next autumn.

Suehiro Shuzo Daiginjo Gentzi. My boss said he got it as a thank-you for his work and that is how I met Genzei. I wanted to try it someday. It was sold out in Aizuwakamatsu. I found it by chance in Ashinomaki Onsen and bought it immediately. It has a gorgeous, fruity aroma. The refreshing aftertaste does not betray the aroma, and it is delicious even if you drink it again and again. It makes you want to sigh when you smell the finished bottle.

Aizu Ryugasawa Junmai Daiginjo Enju-genjo. The more you drink it, the more you like it. This is one of the sakes that I want to go to Aizu again sometime to buy because I didn't expect this taste.

This is a fine sake that makes you glad to be born in Tohoku. The mouthfeel after 10 minutes is completely different from the one after opening the bottle. The taste is like a pear and the slight froth is delicious.
