I had heard that it was a generic Kahayo Yoku, but the atmosphere is close, but it has no depth and has a strong sweetness similar to Mida. Delicious, but not to my taste.
It has a strong sharpness and high alcohol content that lives up to its dry name and comes on strong. It is characterized by a light and dry taste that is not typical of Fukushima. It has a fruity taste in the back, so it is more than just light and dry. 4
The umami, bitterness, and sweetness are all present at a high level. On the other hand, I suspect that a junmai ginjo would be too elegant. I doubt it. 5. You can keep drinking it.
Arabashiri Nama Sake
As one would expect from a kijo-zake, it is highly aromatic, but it is also very sweet. It is not a sake to be drunk in large quantities, but one sip is enough. 3
When I drank it at a restaurant before, I remembered that it was delicious because it had both dryness and umami, which is typical of Itsukashi, but when I drank it again, the umami was weak and the goodness of Itsukashi was gone. It is dry, light, and has a good sharpness.
