Yamamoto Junmai Ginjo Indigo Blue Made from Hozumi sake rice developed by Akita Prefecture. It is soft and gentle on the palate. The heat in the mouth mixes with the flavor and gives it an even gentler flavor.... Perfect for summer.

Hida Takayama's famous sake It is called "dry" but it is a different level of dryness. Mellow and the flavor of rice overflows in the mouth, but it is a clear and elegant sake. It's a gem that you can't help but drink too much when it's served cold. Thanks to Hida

watch out for Sumie Summer Junmai It is the beginning of dryness, but it also has a sourness that flows through the mouth in a hard taste. A summer sake that goes well with all kinds of food.

Hato Masamune Special Junmai Summer Jun Ocean Blue It starts with a clean taste. It has a subtle spiciness, but it goes down your throat and into your stomach. I felt a woody, lumber-like flavor as soon as I drank it.

Hakuin Masamune Special Junmai At a certain ryokan in Izu Nagaoka, I ordered this sake because they had a lot of snacks, but I hit the jackpot. I had it cold, but it was refreshing with a hint of rice harshness, and matched perfectly with the Ise lobster sashimi! Thank you very much.

Sougen Junmai Room temperature This is a clear, light, slightly sweet sake that does not seem to be pure rice. The sake has a light, watery mouthfeel, but with just the right amount of acidity and elegance, you can drink as much as you want. It was a junmai that reminded me how particular the rice is. Thank you for the food!

Momokawa Junmai Momo-gawa Junmai is a mild sake with an acidity that spreads easily through the mouth. It has a slightly pungent aroma with a hint of rice in the nose, making it a great accompaniment to nabe and other dishes. It's a little sweeter than a lukewarm sake, and the flavors spread out a bit. Room temperature: The acidity is refreshing and the richness of the rice is more apparent. Best matched with butterbur 😋.

Warmed up lukewarm. The balance between the acidity and the rice is perfect! At room temperature The perfect medium mouthful! The bitterness is just right and it's not habit forming.

Morimasu Special Junmai I got this sake on the way back from a visit to Nanasawa Onsen in Kanagawa Prefecture. Nanasawa-so, a day trip hot spring, was a power spot with zero magnetic field. The sake was cold, with a hard bitterness and harshness, and a solid sourness that spread in the mouth and made it worth drinking. It was a feast.
