Clear and almost transparent. Melon, watermelon-like fruits, and yogurt-like lactic acidity dominate the nose. Attack, sweetness and acidity are medium to strong. Some bitterness. Short finish. Youthful and floral.
V1116 is a yeast used mainly in the New World, and in the Old World, it is sometimes used in Alsace Gewurz and Loire Sauvignon. It is a wine yeast, but it is a cerevisiae yeast also used in sake, and I personally do not find it to be wine-like, but rather more in the direction of a sake yeast, such as nama-hashiro, yamahai, or yama-hai. A bottle costs about 3,500 yen. Cosmetically speaking, it is 3.8/5.
