The rice used is 100% Dewanosato rice produced in Yamagata Prefecture.
This is a 10-year aged old sake, limited to the Kigawaya Hanpukai.
It is then aged for another year at home.
It has a savory flavor with a nutty roasted feel.
It has a deep sweetness.
Long-aged, but easy to drink without being sticky.
When heated, the alcohol comes on strong.
The sweetness settles down and it becomes more dry.
The umami is very strong.
