When you put it in your mouth, you first taste the moderate acidity and bitter flavor. Later, sweetness slowly follows.
The fresh aroma and sweetness will keep your cup going.
4.1★★★★☆
I give it this score because I like it a lot in the dry category.
Overall rating is 4.0.
It is not just a gulp with a sharp taste, but it is not just a gulp with a sharp taste, but a clear taste. It's not a sharp, gutsy type, but it has a clear and refreshing taste, so you can drink it easily. It was the first time in a long time that I found a dry sake that I thought was delicious! As expected of Banshu Issen!
This junmai ginjo-shu is brewed using local Aizan grapes from Banshu.
It is a juicy sake with a miraculous balance of "sweetness," "umami," and "sharpness," all of which may seem contradictory at first glance.
The sake is carefully fermented at low temperature for a long time, and the freshness and silkyness are enhanced by the Shin Gin rice polishing and gravity system adopted this season.
It is a bottle that reveals the depth of Aizan's nostalgia.
It smells and tastes like melon, and has none of the unpleasant sake taste that is often associated with amai sake, so you can just gobble it up. It is extremely delicious.
