I didn't get the one I was looking for, but I did find a new brand.
Wada Ryu Tosui.
The brewer himself visits other companies and borrows their facilities to brew his sake.
It has a strong taste with a nice sharpness.
Wada Ryu-Tosui Yamae-Nishiki Nama-Shu
Pure(?) like sugar! It has sweetness! Mouthfeel like it has a strong umami, but not too strong, easy to drink!
There were other sake rice varieties available, so maybe next time I'll buy more than one and compare them!

I went to Niigata and Nagano last week. After buying two bottles of Shinshu Kamerei at Okazaki Shuzo (only one of each kind per person), I also visited Wadaryu nearby.
Wadaryu Tosui is available at my favorite liquor store in Kawasaki, so this time I went here.
It has a strong acidity and umami flavor without sweetness. For me, it was a good sake to drink with food.
When I told him about my favorite liquor store, he said "please give my regards", so I contacted the liquor store (my e-mail friend) and he said "I just got a call from Mr. Wada Ryu, you must be talking about Ane-san (tentative name)". It's a pretty good connection ⭐️.

I only visit Nagano in Hokushin and Toshin and rarely go to the rest of the country. Suwa and eels, that's about it. Not Masumi 💦.

Since this brewery does not have a sake brewing license, it is said that the brewery goes to Nagano Meisho to make sake.
There is a pattern of having sake brewed on consignment, but this method is unusual.
I imagined it would be a good old-fashioned sake from the label, but it was light and very easy to drink ❗️.
It has just a hint of sweetness and is very refreshing with little alcohol.
It was a seriously good sake❣️

Wadaryu purchased during the Ueda Sake Brewery Tour
A few minutes north of Ueda Castle Ruins Park
It is about a 10 minute walk from Okazaki Sake Brewery.
The taste is clean and beautiful, and although it is quite dry, the deliciousness is slowly felt.
We also have a photo of Wadaryu Tosui and 🐱 that we drank before.
The taste is quite dry, and the sweetness is not that strong, but the sake is clean and crisp. The rice used for sake seems to be Hitogochi rice. Personally, I had never heard of this rice before. Recently (?), there have been many different types of rice produced in different regions. There are various types of rice in each region these days.
