Miscellaneous impressions
A small bottle of Taido that I happened to see.
It has a clean, dry mouthfeel that does not interfere with meals. The aroma that passes through the nose is pleasant.
I read your profile. I am not a member of Sake-no-Wa (I drank but could not comment), but I have been drinking for about 40 years and conquered all the prefectures a few years ago. I recommend you to visit all the prefectures because you can taste the sake and the snacks that would go well with the sake. Good luck!
Taido's Spring Sake
The one made with Kame-no-o seems to be seasonal in spring and fall
Fresh aroma, refreshing sweetness and acidity 🥰.
Then a tingling and spicy taste hits your tongue!
Spicy but easy to drink and delicious 😋.
Stepping Up to Shochu
Mild alcoholic aroma. A slightly mellow mouthfeel, followed by a mild sweetness and a tangy pungency. A cool hint of aroma rises, and then the spiciness is felt and it is quickly snapped off.
The quality of the sweetness, spiciness, and alcohol make this sake reminiscent of shochu.
