Drinking at home. bottled in 2015, BY unknown. The color is pale yellow. At room temperature, it has a mature and delicate flavor; at 45°C warmed, it has a softer flavor, more mature and crisp. Although it is an aged sake, it is 50% polished and has a thin line at 14°C. It is not bad at room temperature, but it is not good at lukewarm temperature. Drinking at home. 2015BY, 2017 bottled. Light yellow in color. At room temperature, the sense of maturity is surprisingly modest and easy to drink, but it has a hard, closed feeling. When heated to 60°C, the softness and sweetness increase and it has a nice sharpness. It has a good balance and is clearly more suited to warming up. It is a good match for meat dishes.

The second bottle of the Sanin Sake Heated Sake Tasting Tournament continued with a Junmai sake from Suwaizumi. Purchased in May 2020. It was produced in December 2012, aged 7 years at the liquor store to a mountain yellow color, and 10 years old. The coloring has advanced considerably👍. Caramel-like ripe sheen even at room temperature. When heated up, it is still hot and fragrant, with a unique matured aroma and acidity that is addictive and appealing. The powerful umami comes through with a sharp sharp edge. Oh, it is powerful and fragrant 😊. Suwaizumi is a sake from Tottori Prefecture, not Nagano Prefecture.
