Junmai Sake is the fragrance of dreams (Kaori)
Introduced in Reborn Kura in dancyu 2022.
Mr. Kobayashi, the brewery owner, is from Chiba.
His mother's family owns a brewery in Aizu Misato-cho.
He used to work for an IT company, but when he heard about the demolition of a sake brewery, he became a brewery owner.
The brewery reopened in 2020.
Mr. Kazunori Inomata, who was also involved in the production of Tobiroki, is the master brewer.
The name was changed from "Wa" to "Kai" this year!
Fresh and fruity, but with a strong umami, bitterness, and overall well-balanced sake quality.
I first encountered it at a sushi restaurant in 2021, where it was introduced as a recently reopened restaurant, and at that time I just loved it and became a fan!
