The strength of aged sake and smooth mouthfeel. The more you drink it, the sweeter it gets as the days go by. Junmai Daiginjo made from 30% polished Yamada Nishiki. It is a blend of 30% polished Yamadanishiki and more than 5 years old Nakadori. It is indeed the best of Gikyo.

It has the mellow taste of chivalry. It has a light taste that is not chivalrous. The alcohol content is more than 13 degrees and less than 14 degrees. Even so, it is smooth to drink. It is made from special Yamada Nishiki at 60% polishing ratio.

It is a rich, mellow sake with a gorgeous aroma and a full mouthful of rice flavor. I am always in love with the old-fashioned label that never blurs. Serve with sashimi

It looks almost transparent with a slight smear of color. However, when you take it into your mouth, the "nigori" (a trickle of nigori) softly adds a mellow nuance. The first impression is a full taste with the umami of the rice. However, it is not too heavy, but rather well-balanced, clear, and elegant. The strength and delicacy of Yamadanishiki from Tojo, Hyogo Prefecture's special A district coexist, with a full-bodied, deep flavor. When you hear the word "ogara-mi," you may imagine it to be sweet, but this one has a slight sweetness with a sharpness that goes through it easily, giving it a pleasant feeling that you will never get tired of drinking it. It has the freshness of a new sake and the core flavor of a chivalrous man. There is nothing flashy about it, but it quietly conveys that it was brewed with care. It is a deeply delicious sake that you will want to enjoy slowly with a meal.

First matured sake The color is so yellow that you would never expect it to be this yellow! Round and smooth, with a smooth mouthfeel. I was not so sure I liked it, but it wasn't as bad as I thought it would be. It has a deep sweetness that is totally different from the fresh fruity taste of new sake. It's great to drink it at room temperature.

Today's dinner 🍶. Continuing from yesterday Gikyo Junmai Unfiltered Nama Sake 70 Limited Tailings The aroma is still sour and yogurt-like. Sweet and sour with a gaseous taste. It is more refreshing and lighter than yesterday's. I think the bitterness has come out. I think the bitterness has also come out in full 😊. Delicious 🥰.

Special order sake from local sake breweries Gikyo(Aichi) Gikyo Junmai 70% unfiltered raw sake Limited version Kyoseikai special cultivation special A Yamadanishiki No.9 yeast The sake is specially ordered and packed by Jizakeya Sake brewery, to which I am very indebted. This is a rare sake that can only be tasted here 🍶. And it's the first time I've tasted it ✨. I'm so excited! Sour yogurt-like aroma😍. Sweet and sour with lots of fresh gasiness. It comes rushing in later and later. And a bitterness that you can feel slowly. I could go on and on and on 🥰 Delicious 🥰. I'm going to try raising the temperature now: ☺️

Last drink of the day This sake has a strong alcohol taste and a strong rice flavor. It is not heavy, and although it is not quite refreshing, the aftertaste is clean and crisp. I was satisfied. ❗️
