The nose is quite acidic and sour on the palate.
But the taste is not overpowered by it at all.
The first day we tried heating it up to lukewarm, and it tasted much the same as the cold sake.
On the second day, I tried heating it up and it softened a bit, so I decided to leave it for a while.
On the seventh day, both the cold and heated sake had lost some of their sharpness, and the cold sake had more body, so we decided to keep the sake cold for the rest of the day.
The Nishimino sake was a single bottle of Mukaze, but it was purchased at a familiar store. The acidity is strong, but as the day goes by, it mellows out and the umami asserts itself.
It is easy to drink with a sharp, sharp acidity that is clean and strong, with a hint of rice sweetness that comes later. I thought it was a sake that should be cooled down to the perfect temperature. It is a perfect sake for summer.
