Sasaichi Junmai Daiginjo Koshu Yumesansui
In my neighborhood, "Tadashi" is more often seen.
I bought it because I was attracted by the price tag pop-up in a local supermarket in front of Fujikyu Highland, which said it was only available in Yamanashi.
It was one of the 4-goupe bottles (6/10) that I brought back from a trip.
I drink it cold.
The color is clear and colorless.
The aroma is fresh and slightly sour, like green apples.
The mouthfeel is smooth and slightly sharp.
On the palate, a slight sweetness is felt at first, followed by sourness and a slight sweetness, and then changes to a slippery and spicy taste.
The spiciness is quickly snapped off, leaving a clear spiciness on the tongue. The tingling sensation on the tongue remains for a long time.
Not classical, but a pretty legitimately refreshing food sake.
The umami flavor came out firmly on the second day of opening the bottle, and the balance with the acidity was perfect and addictive.
Ingredients: rice (domestic), rice malt (domestic)
Ingredient rice: 100% Yumesansui produced in Yamanashi Prefecture
Rice polishing ratio: 45
Alcohol content: 16%.
A little dry. It has some umami. There is also a certain amount of alcoholic aroma that comes through to the nose. At first, I thought it was a bit harsh, but as I continued drinking, I could feel its good balance. Good as a food wine. It can be served with dishes with a little fat. It tastes better at near room temperature.
The water is sharp like glass and I think I can tell the difference in water quality from the Aomori local sake I often drink. Well, all sake tastes good once you drink it.
Purchased on a trip to Yamanashi. It has a local color in an aluminum can. Strong brewer's alcohol aroma, more refreshing than expected, with a crisp aftertaste.

Muro-san, I'm glad we went to the Sasaichi brewery even though it's a bit far away from the brewery! I liked the Nama Sake the best but had to give it up due to cold storage. But this summer Junmai Ginjo is also refreshing and delicious✨
